Meat processing at any scale is a complicated business. How do small-scale processors – essential partners in bringing local, niche meat and poultry to market – make it work and stay in business for the long haul?

The Niche Meat Processor Assistance Network was created as a place to share ideas, experience, and innovation that will help this important sector thrive. We are kicking off a new series of Innovation in Practice articles, based on interviews with successful small-scale processors about how they solve common challenges.
