Penn State Preventive Controls for Animal Food

Description: The 2½-day course provides instruction on the development of an Animal Feed Safety Plan, as required by FDA as part of the Food Safety Modernization Act. Participants will learn the key elements of a food safety plan, how to conduct a hazard analysis for biological, chemical and physical hazards, how to develop and implement risk-based preventive controls (process, sanitation, and supplier), along with the appropriate verification and validation procedures, and understand the requirements of a recall plan.

Penn State Extension Beef Cattle Short Course

Description: This two-day annual workshop will feature a live cattle evaluation and a rail class evaluation.
Day one will include dinner, while lunch will be provided on both days.
Following the live cattle evaluation, Felix will introduce guest speakers and workshops to help participants become more comfortable with concepts related to growing cattle for the beef market and using forage resources appropriately.
On day two, the cattle evaluated live on day one will be assessed hanging on the rail under the direction of Jonathan Campbell, a Penn State Extension Meat Science Specialist. Campbell will discuss the yield and quality of each animal and demonstrate how to break down the carcass.
